Sweet, a Little Spicy, and Perfectly Crispy. A Festive Twist on a Middle Eastern Classic.

Pumpkin and squash might be the stars of Autumn, but they’re far too delicious to retire when the leaves fall. Today, we’re bringing a fresh and vibrant hint of the Middle East to your Christmas table.

Originally inspired by Egyptian flavours, this salad has become more and more popular across the UK each year. It’s something sweet, a touch spicy, beautifully aromatic – and absolutely perfect alongside your festive spread.

Shopping List:

  • 1 x Pumpkin
  • 500g Lamb’s lettuce
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds
  • 1 tsp Sesame seeds
  • 1 tsp Fennel seeds
  • ½ tsp Chilli flakes
  • ½ tsp Salt
  • 1 tbsp Crushed pistachios

Method:

  • Peel the pumpkin, remove the seeds, and slice into 1-inch fingers.
  • Toss with all the remaining ingredients until evenly coated.
  • Roast until soft and golden, then allow to cool.
  • Once cold, place the lamb’s lettuce on the bottom of a large bowl or platter.
  • Top with the roasted pumpkin and drizzle over any of the dressing created during roasting.
  • Enjoy this simple, elegant dish. A beautiful balance of warmth, crunch, and festive colour.
